Honey-Lime Chicken Skewers

We grill out almost exclusively in the summertime, simply because it’s too darn hot to do much of anything else.

And it’s still only the beginning of June.

If you’re like me, you get tired of the same old meats and veggies thrown over the open flame–and by the time dinner time rolls around, I’m usually too hot and tired to do very much kitchen prep.

Which is why I love quick and simple marinades–you can mix ‘em up in less than five minutes early in the day, and all you have to do at dinner time is throw stuff on the grill.  This is hands-down my favorite kind of cooking.

Honey-Lime Chicken Skewers

If you're using bamboo skewers, soak your sticks in water for at least 5 minutes. Cut chicken into large chunks, and skewer. Allow to marinate for at least 1 hour.

Ingredients

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • juice of one lime
  • 2 garlic cloves, minced
  • 1-2 teaspoon Siracha
  • red pepper flakes, to taste
  • 2 tablespoon cilantro
  • 1 pound skinless, boneless chicken breasts

Instructions

  1. In a small bowl, combine your ingredients, through the cilantro. Mix thoroughly.
  2. Pour marinade over chicken breasts and turn to coat. Cover and allow to marinate for at least 1 hour.
  3. Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.

    Looks great. I am the cook in our home, but thank goodness my hubby eats about anything I put in front of him. This recipe should work. A few questions…do you marinade the chicken breats whole and then cut them up for skrewering/grilling and what is Siracha and is there a subsitute for it?? Thanks.

      Hi Diane–I’ll have to do some tweaking to my post, since my mom pointed out to me this morning that not everyone knows what Sriracha sauce is. :-) It’s an Asian chili sauce, and you can usually find it in the Asian/International aisle in your grocery store (even Wal-Mart carries it!). It’s spicy, vinegary, garlicky, and a little sweet and the best thing EVER for adding some heat and a lot of flavor to an otherwise bland dish. I’m not sure of an appropriate substitute, since it’s quite a bit thicker than Tabasco–so readers, any ideas??

    Can you use Tabascco or Tapito

    • Alison, I know I’m late to the party here (just found this recipe via Pinterest), but when a recipe calls for hot sauce, you can always substitute your favorite. Either Tabasco or Tapitio would work, but you might want to kick up the garlic just a tad.

      The sriracha is very unique in flavor, and so it’s probably a major reason this simple recipe works so well. Loaded with garlic and fresh sun ripened chile taste, if you can find it, try it. Sometimes called “Rooster Sauce” because of the ubiquitous label on the plastic squirt bottle, it’s available everywhere these days.

    Made this tonight for father’s day dinner. It was so simple and delicious! The only suggestion I would make to others is to be sure that your cut your chicken in large chunks as chicken on kabobs tends to dry out.

    Wow…made these tonight for my family. Everyone loved them, especially my 3 year old son. I did omit the red pepper flakes because I had never cooked with sriracha before and I was scared it would be too hot for my kiddos (8 yr. old daughter, too). Definitely working its way into our normal rotation of recipes! YUMMO!!!!

      Hi Kelly! This recipe uses 1 pound of chicken breasts, which for my husband and myself made two meals. So just adjust the marinade accordingly, depending on how many people you’re serving and how much they typically eat! =) If you don’t want to skewer that much chicken, this works great on whole breasts (or thighs), too. Have a great holiday!

    I am in love with this recipe. I marinaded shrimp and chicken and both turned out sooo good!! I added more siracha and a ton of red pepper flakes. I love my food spicy! I paired it with grilled veggies and brown rice. Was thinking I could add it to a salad as well. =)

    This was amazing! It’s my new go-to recipe for grilled chicken. I left out the red pepper (little kids), cilantro and sarachi sauce but next time I’ll try adding the sarachi. It was fantastic but would’ve been even better with some heat. Oh, and I marinated while chicken thighs instead of skewering them. Even my kids cleaned their plates! Thank you!

    I made these for dinner tonight and they were excellent. Really easy to prep and cook and the flavor was awesome. I charred mine a little too much so next time I’ll keep a closer eye on them and probably only cook 5 min. or less on each side. Thanks for the delicious recipe!

    Saw this recipe on pinterest and made these last night on the indoor grill pan and they were DELISH!!! Quick and easy marinade that makes for flavorfull, delicious grilled chicken. I swear it tasted like it was grilled outdoors. Loved this recipe…cannot wait to try again with pork chops and fish.
